Whole wheat pancakes

Ingredients:

  • 1/2 cup all-purpose flour
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1 cup whole wheat flour
  • 1 egg
  • 2 cups buttermilk
  • 2 Tbsp. melted butter or oil

    Directions:

    Mix the dry ingredients together. Mix the egg, buttermilk and shortening together and beat them. Quickly combine the beaten eggs, buttermilk and shortening with the dry ingredients and mix them together until they are just barely moist. The mixture will be lumpy. Bake on a hot greased griddle, turning over only once. Makes over a dozen 4-inch pancakes.
