True Blue-riffic Pancakes

Ingredients:

  • 1/2 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 Tbsp. vegetable oil
  • 1 egg
  • 1 cup plain yogurt
  • 1/2 cup soy milk or low-fat milk
  • 3/4 cup blueberries, fresh or frozen

    Directions:

    Lightly coat a griddle or electric skillet with cooking spray and heat over medium-high heat. In a large mixing bowl, combine the all-purpose flour, whole-wheat flour, baking powder and baking soda. In another mixing bowl, mix together the oil, egg, yogurt and milk. Add the yogurt mixture to the flour mixture and stir just until combined, adding 1 to 2 Tbsp. additional milk if the batter is too thick. Gently fold in the blueberries.

    Spoon small amounts of batter onto the hot griddle to make four pancakes. Cook until bubbles form on the surface, then flip and continue cooking until the pancakes are cooked through.


    Helpful hint

    You can tell when your griddle or skillet is hot enough by sprinkling a few drops of water on the surface. If the drops dance and sizzle, it is ready for cooking.
