Ingredients:

  • 1 prepared 9-inch single-crust pie pastry or Pastry for a Single-Crust Pie*
  • 1 lb. (16 oz.) hamburger
  • 1/2 cup onion (2.5 oz./70 g), finely chopped
  • 1 pkg. (1 oz./28 g/4 Tbsp.) taco seasoning
  • 3/4 cup (6.9 oz./195 g) refried beans
  • 1/2 can (2 oz./56 g/1/4 cup) diced green chilies
  • 1 cup (4 oz./113 g) grated Monterey Jack cheese
  • 1/2 cup (2 oz./56 g) grated cheddar cheese
  • 1 Tbsp. chopped olives
  • 4 eggs (7 oz./200 g), beaten

  • chopped lettuce
  • olives
  • salsa

    Directions:

    Prepare a 9-inch pie crust using a prepared crust or the Pastry for a Single-Crust Pie* recipe at https://okwheat.org/recipes/pastry-for-a-single-crust-pie/. Heat oven to 425°. Roll out the pastry, place in a 9-inch pie plate and prick the bottom and sides with a fork. Bake for 10 to 12 minutes or until lightly golden. Reduce oven temperature to 350°.

    In a skillet, brown the hamburger and drain well. Add the onion and cook until softened. Stir in the taco seasoning and mix well.

    Layer the baked pie crust in this order: refried beans, diced green chilies, meat mixture, Monterey Jack cheese, cheddar cheese and chopped olives. Pour the beaten eggs evenly over the top. Bake at 350° for about 30 minutes or until the eggs are set.

    Garnish as desired with sour cream, chopped lettuce, olives and salsa before serving.
