Sugar Cookie Fruit Pizza Flag

Ingredients:

Cookie crust:

  • 2 3/4 cups flour
  • 1 cup butter, softened
  • 1 3/4 cups sugar
  • 2 eggs, divided
  • 2 tsp. vanilla extract
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • Frosting:

  • 8 ounces cream cheese, softened
  • 3 Tbsp. unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp. vanilla
  • Toppings:

  • Assorted fruits such as blueberries and strawberries. Kiwi, grapes and mandarin oranges also work well.

    Directions:

    Cookie crust:
    Cream together the butter and sugar until well mixed. Add the eggs and vanilla, and beat until light and fluffy. In a separate bowl, whisk together the flour, baking powder and salt. Add the dry ingredients to the wet mixture and beat until well combined. Spray a large sheet pan with cooking spray. Roll or press the dough evenly to cover the entire pan. Bake at 350°F until the edges just begin to brown. Let cool completely.

    Frosting:
    Cream together the frosting ingredients until smooth and fluffy. Chill in the refrigerator until the cookie crust is completely cooled.

    Toppings:
    Wash and slice desired fruit. Keep refrigerated until ready to decorate.

    Assembly:
    Spread the cooled cookie crust with cream cheese frosting. Arrange blueberries in the upper left corner to represent the stars of the flag. Place sliced strawberries in horizontal rows to represent the stripes. Serve and enjoy.
