Soak raisins in hot water to plump them, then drain the water. Combine together eggs, vanilla, butter and sugars until the mixture is creamy. Mix together the flour, All-Bran and baking powder. Add the dry ingredients to the rest of the mixture and combine until the mixture is moist. Add raisins, carrots, apple, walnuts and coconut. Spray a 12-count muffin pan with nonstick spray or use greased/sprayed cupcake liners. If using liners, fill batter just below the liner. Place in the muffin pan and bake at 400 degrees for 25 to 30 minutes.
