Looking for something green for your St. Patrick’s Day dessert? This simple cake uses only a boxed cake mix, lime gelatin and a tub of your favorite whipped topping. Decorate with green sanding sugar for a fun, green dessert!
Heat oven to 350°. Spray a 13-by-9-inch cake pan with nonstick cooking spray.
In a large bowl, beat the cake mix, water, oil and egg whites with an electric mixer on low speed for 30 seconds, then scrape the sides of the bowl. Beat on medium speed for 2 minutes. Pour the batter into the prepared pan.
Bake for 23 to 28 minutes, or until a toothpick inserted in the center comes out clean. Cool on a rack for 20 minutes.
Meanwhile, in a medium bowl, pour the boiling water over the gelatin and whisk until completely dissolved. Poke holes across the cake about every inch using the handle of a wooden spoon or the tines of a fork, going about halfway into the cake. Carefully pour the lime gelatin evenly over the cake. Refrigerate until completely cooled, about 1 hour.
Spread the whipped topping evenly over the cake and garnish with green sanding sugar, if desired. Cut into 12 pieces and serve chilled.
Notes
Try adding a drop or two of green food coloring to dye the whipped topping the green color of your choice. Easily decorate the top of the cake with a variety of St. Patrick’s Day goodies.
