Preheat oven to 350°F. Spray donut pan with nonstick spray. (No donut pan? Try using a mini muffin pan for “donut holes.”)
Mix together oil, buttermilk, eggs, sugar, salt, baking powder and vanilla until combined. Stir in flour and mix until smooth. Fill donut pan about 3/4 full.
Bake for 15 minutes. Remove from oven and let cool for 5 minutes. Then remove donuts from pan.
Place sugar in a sandwich bag. One at a time, drop donuts into the bag and shake lightly to coat.
Enjoy immediately or store in an airtight container.
